This is copy pasted from my sisters site and it's my grandmother's recipe. It pretty much goes in all PRican cooking. For more flavor you can dice up a little bit of cooking ham and throw it in with some chicken. Tasty. Sofrito 1 bunch Cilantro 8 leaves of culantro (if you can’t find add some extra cilantro) 1 head of garlic 2 large onion 1/2 lb. sweet chili peppers 2 large green bell peppers ½ cup olives with pimientos 1 sm jar roasted red peppers 1 tbsp. capers 2 tbsp. crushed oregano 1 tbsp. salt 1 tsp. black pepper 1 cup EVOO (extra virgin olive oil) Rinse, peel and chop vegetables. Combine in food processor and puree. Like my sis says, u can find it in the grocery made by Goya but this is homemade. A lot of these ingredients u can pick out of a home vegetable garden. This can last a long time in the freezer and u can make it easy to separate by pouring into an Ice cube tray. Correction: It's some store bought creole sauces that have chicken stock in them, not the store bought sofrito. But it does have Modified Food Starch, Monosodium Glutamate and Soy Flour.

No prob , cilantro can be used as a substitute if u can't find any culantro (a.k.a recao) although I find culantro more potent. It grows like a weed in my garden, have to root it out of different pots.
Also, this is super awesome with Shrimp just add a little tomato sauce and u've got a creole sauce (Salsa Criolla)
